Food Club Mixed Berry Baked Oatmeal
Start your day off with this family-loved warm breakfast casserole that’s packed with flavor. It takes oatmeal to the next level. Not only is it bursting with juicy berries but baked oatmeal has a chewy, soft texture that makes for a satisfying and easy breakfast.
Ingredients
- 2 cups Food Club old fashioned rolled oats
- 2 cups Food Club frozen berries
- 2 large eggs - adds a creamy texture and binds the dish together
- 1/4 cup maple syrup - slightly sweetens the dish but can be substituted with honey
- 2 cups whole milk - adds a creaminess to the baked oatmeal
- 1 teaspoon baking powder - adds a light and fluffy texture to the baked oatmeal
- 1/2 teaspoon salt - adding a bit of salt enhances the flavors of all the other ingredients - don’t skip it!
How to Make Baked Berry Oatmeal

Preheat oven to 350°F and coat a 9x9 baking dish with nonstick cooking spray.

Whisk together eggs, maple syrup, and milk until smooth. Mix in oats, baking powder, and salt. Gently mix in half of the berries and pour the mixture into the prepared baking dish.

Top with remaining berries.

Bake for 30-40 minutes or until the center is set. Enjoy!
Milk Variations
Customize this recipe to satisfy a dairy allergy using your favorite milk. You can substitute almond milk, coconut milk or oat milk for the dairy milk called for in the recipe. Just keep the ratio of 1 part liquid to 1 part old-fashioned rolled oats.
Flavor Variations
Not only is this recipe simple to make, but you can easily customize it with your family’s favorites!
- Add Peanut Butter - reduce the maple syrup to 1 tablespoon and add 1/4 cup of smooth peanut butter to the mixture
- Add Chocolate - stir in 1/3 cup of chocolate chips into the oatmeal mixture
- Other Add-Ins - add in 1/2 cup of shredded coconut or chopped nuts along with the frozen berries

Feeding a Crowd?
If feeding a crowd or prepping breakfast for the week, this recipe can be easily doubled. Bake the oatmeal mixture in a 9x13 inch baking pan in a preheated 350°F oven for 40-50 minutes or until the center is set. If the edges begin to brown, use a sheet of aluminum foil to create a tent over the oatmeal.
How to Make This Ahead of Time
If you and your family’s mornings can be hectic, eliminate the stress of making breakfast daily. Bake this berry oatmeal ahead of time for the entire week. Cool to room temperature, cover tightly and store in the refrigerator for up to 3 days. When ready to serve just slice and heat individual portions in the microwave for 30 seconds.
